I struggle with breakfast as some days I will have a really good breakfast and some days I will just have coffee and then by 11 am I am ravenous.  Today I made a Weight Watchers smart points omelette.  I used 2 eggs 4sp 1 rasher of bacon 1 sp mushrooms 0 sp 2 chopped spring onions 0 sp and 1 tbsp parmesan cheese 2 sp plus salt and black pepper.  It was lovely and I hadn’t had an omelette for a while.  Well worth the 9 smart points.

My go to lunches 


Sometimes I am guilty of skipping lunch and then end up snacking on junk until my evening meal. If I am out and about and don’t have time to go and sit down and eat lunch I will pop into Greggs for one of their salad boxes,one of my favourite is the Falafel and cous cous with rocket, tomatoes and peppers and a little tub of humus and little tub of yogurt and mint. I really like this and create it at home too.

I love making soup and an easy one is my roasted red pepper, tomato and red onion soup. It is easy and filling . I love dippy /picky food and a quick and easy lunch or snack is humus with thin crackers and carrot sticks.  I also like making tortilla’s which are great to use up those odds and ends in the fridge I like it cold with salad. When I am cooking new potatoes I always cook more than I need so I have a few to slice up and add to my tortilla with eggs,mushrooms,peppers,feta cheese or cheddar, I also add spring onion and any other bits I have in the fridge. It is perfect for a summer lunch and is very portable.

images I love to cook but I am guilty of being in a cooking rut,I shop once a week for the main shop and then again in the week for fresh items and I meal plan too,looking at the last few months meal plan(excluding Christmas week) I find I am cooking a lot of the same meals every month,I have a mountain of recipe books which I am ashamed to say sit unused on my kitchen book shelves, from time to time I will get a few out and flick through them for inspiration but do make the best use of them,I watch cooking shows on TV and I like lots of different cooking styles.I love Nigel Slater,who in my opinion is a great author as well as a cook and comes from my neck of the woods.I like his relaxed approach to cooking,no fancy cooking just every day ingredients,I love his Simple suppers TV show. I don’t like watching Gordon Ramsay in a professional kitchen but love his cooking shows from his home with his family. I got his Ultimate Home Cooking book for Christmas.

So this year I am getting out of the cooking rut and am aiming to cook 2 new recipes every month and eventually my aim is to cook a new dish every week,I want to try new ingredients too.I can cook and (blowing my own trumpet) I think and have been told I can cook well. I am guilty of taking photo’s of meals I cook and when I am out,some I post,some sit in my album not used but I will be posting my new recipe photo’s even if they don’t turn out exactly how they should,which is quite possible.

My weekly food plan


My food plan starts on a Saturday as we go food shopping for the main shop either on Friday evening or Saturday morning depending on what time John gets home from work,mostly it will be Friday.

Main meals (our main meal is eaten in the evening,Sunday we have a lunch or brunch for our main meal)

Saturday – Chicken curry,basmati rice and Naan bread

Sunday – Brunch (full English for lunch)

Monday – Roast chicken and stuffing with roast potatoes ,cauliflower cheese ,sprouts,carrots and gravy

Tuesday – Pasta bake

Wednesday – Sausage and bean cassulet

Thursday – Stuffed jackets(bacon,spring onion and cheese stuffed baked potatoes) with baked beans,Johns favourite comfort food

Friday – Leek and potato soup and sandwich (before shopping)

Breakfast is usually,toast and cereals for John eaten on his breaks from driving during the week ,for me maybe poached eggs on toast and I love cinnamon and raisin bagels or French toast with berries or baked plums.

Lunches,John takes a packed lunch, I will have soup and a sandwich,a jacket potato with chilli or cheese and beans.

Friday five…food


My Friday five is five things I am cooking,making or baking this week. I meal plan and these yummy things are in this week’s plan.
1.Ham cooked in coca cola and onion and then baked with a brown sugar and mustard glaze. This will be served with ham,egg and chips and then we have the leftovers on sandwiches or a salad during the week.
2. Blackcurrant and lemon triffle. Well I should say layered dessert. It is so easy and is really just a put together pud. I have a pretty dish I will layer madeira cake slices and spread with blackcurrant jam with blackcurrant cassis drizzled over then blackcurrants and topped with marscapone mixed with lemon curd and the top sprinkled with toasted almonds. A perfect summer pudding.
3. Chicken and chorizo traybake. I love chorizo and I fill a large roasting tray with chicken thighs,small cooking chorizo,garlic,new potatoes halved,red peppers sliced and chunks of  red onion. I drizzle with a little olive oil and season. I roast in the oven and love the way the chorizo gives up its paprika flavoured oil when cooking. I love a one pot or tray meal and this one is so easy.
4. Spicy lamb koftas with flatbeds and yogurt and mint sauce and salad. So cheap and easy to make and delicious. I make the koftas from scratch using minced lamb but do buy the flatbeds. I buy a pack and freeze them. I can’t wait for this.
5. Spaghetti with roasted tomato and feta, cheap and easy and a lovely light meal. I roast halved cherry tomatoes drizzled with oil and seasoned. Then cook the pasta. Drain and top with the tomatoes and crumbled feta and drizzle with a little oil to serve.
